Abstract: In this paper we find that there is a highly increase for soybean oligosaccharides extraction in the diluted alkaline solution， and there is also a significant increase for soybean maximum water-absorption． There exists an intimate relationship between the oligosaccharaides ratio and the maximum water absorption．
