Rapid Impedance Method for Predicting the Potential Shelf-Life of Packaged Pasteurized Milk

Abstract: Estimation of potential shelf-life of packaged pasteurized milk utilizing impedance method was studied. The results showed that there was a highly correlativity between shelf-life of ’Fengxing` pasteurized milk and logarithm of CFU per milliliter.The impedance detect time (DT)after 30℃,6 hour’s preliminary incubation added with 100μl and 200μl milk sample or after 37℃ ,6 hours’preliminary incubation added with 100 to 400μl milk sample were investigated and the regressive equation was constructed for predicting the potential shelf-life. Comparing to traditional method, Impedance method was a rapid, accurate and convenient method and the whole estimation process could finished within 11~14 hours.
