Effect of Irradiation on Degradation of Ochratoxin A in Maize

Abstract: Objective: To explore the effect of γ-irradiation on the degradation of Ochratoxin A in maize. Methods: Maize samples contaminated with ochratoxin A were irradiated by 60Co-γ ray initially at different doses, then ochratoxin A in samples was analyzed by HPLC and nutritional components were also determined. Results: The content of ochratoxin A in maize exhibited a significant decrease, and the degradation rate of ochratoxin A could reach up to 50% at the dose of 10 kGy. The nutritional components were not destroyed by γ-irradiation. Conclusion: γ-Irradiation can degrade ochratoxin A in maize without decreasing the quality of maize.
