Progress of the application of electrochemical technology in food detection

Abstract: Electrochemical technology is usually based on the reaction of the substance to be tested in the detection system to generate electrochemical signals to realize the detection of food-related components. Because of its advantages of simple operation, low cost, high precision and sensitivity, its application in food detection and analysis has attracted much attention, and some research progress has been made. In this paper, the methods, basic principles and application of electrochemical detection and analysis technology in the field of food are reviewed and analyzed, and the application and development prospects of this technology are prospected. In order to better meet the development needs of rapid food detection and analysis, develop new biosensors and construct new electrochemical detection technology analysis and detection, and broaden the application of electrochemical technology in the field of food detection and analysis to provide reference.
