Abstract: Perilla frutescens (L.) Britt., a traditional medicinal-edible plant in China, exemplifies the dual value of nutritional and therapeutic benefits. Enriched with bioactive constituents including phenolic acids, fatty acids, terpenoids, polysaccharides, and flavonoids, it exhibits extensive biological activities. This review systematically analyzes the functions of different active components of Perilla frutescens and summarizes its role in antioxidant defense and cellular homeostasis maintenance, metabolism and immunity regulation, and modulation in the nervous system based on the modulation of Perilla frutescens biologically active substances on the health of the organism. From cross-domain applications, we synthesize Perilla frutescens' innovative industrial practices in functional foods, pharmaceuticals, and agricultural biocontrol, while exploring precision development technologies spanning genomics, CRISPR editing, green extraction processes, and quality control standardization systems. This review proposes multidisciplinary integration frameworks to establish scientific foundations for the characterization and industrial innovation of bioactive components in Perilla frutescens, providing a theoretical basis for their in-depth development in modern health-centric industries.
