Research Progress on the Conversion and Biosynthetic Technology of Rare Ginsenosides

Abstract: Ginsenosides are the main active components of Araliaceae plants such as ginseng. Among them, rare ginsenosides are secondary derivatives formed by the partial deglycosylation of prototypical ginsenosides. However, rare ginsenosides are extremely low in content in natural plants and can be efficiently prepared through various methods including physical, chemical, biotransformation, and biosynthesis. This article systematically reviews the classification and biological activities of ginsenosides, comprehensively compares the advantages and disadvantages of physical and chemical transformation of rare ginsenosides, analyzes the catalytic action, transformation pathways of key glycosidases that can transform rare ginsenosides and the synergistic mechanism of composite enzyme systems, and examines the biosynthetic pathways, frameworks, metabolic regulation, and development trends of rare ginsenosides. This paper can provide theoretical references for the efficient utilization and industrial application of ginsenosides.
