摘要: 根据国内外研究和报道,综述了乳酸钠及其在肉制品中抑菌防腐、延长保存期的作用,并讨论了乳酸钠在肉制品加工中的应用可行性。

Abstract: Asurvey of sodiumlactate and its effect of inhibition on the growth of bacteria and extension of shelf life of meat products are presented. The feasibility of sodiumlactate application to meet products processing is also discussed.
