Screening of α-Glucosidase Inhibitor-producing Strain and Optimization of Fermentation Conditions

Abstract: A high-yield α-glucosidase inhibitor-producing strain named as UN-8 was isolated from farm soil and fermentation conditions for the production of α-glucosidase inhibitor by UN-8 were optimized. The optimal fermentation conditions were determined as follows: 3 g/100 mL of corn meal, 1.2 g/100 mL of yeast extract, 30 mL of fermentation medium in a 250-mL shake flask, 160 r/min of shaking speed, initial pH 8.0 and 32 ℃ of fermentation temperature. The inhibitory rate of α-glucosidase inhibitor produced under these conditions was 75.34%, which was 14.55% higher than before the optimization (60.79%).
