Recent Advances in Functional Edible Coating Film and Its Applications in Preservation of Fresh Meat and Meat Products

Abstract: In recent years, edible coating film has gained extensive concern in the fields of food package and food storage. With the deepening research of edible coating film, many kinds of edible coatings are being used in the preservation of fresh meat and meat products. Current research focuses on functional edible coatings, however, most of them are used in fruits and vegetable products, and research on their applications in fresh meat and meat products has been relatively rare. In this article, the classification and applications of functional edible coatings for the preservation of fresh meat and meat products are systematically reviewed. Meanwhile, strategies for improving the quality and shelf-life of fresh meat and meat products are discussed as well. Moreover, combined applications of edible coating film and other preservation techniques in meat product preservation and future development trends are analyzed.
