Optimum Fermentation Conditions of Neutral Protease Produced by Bacillus subtilis 10075

Abstract: With the modern biological technology, medium compositions and fermentation conditions for producing neutral protease through the fermentation of Bacillus subtilis were optimized, achieving the purpose of increase production of neutral protease. With single factor trial and orthogonal experiment, the optimal medium composition of strain 10075 were determined as maltose 8.0%, peptone 8.0% and MgSO4 0.04%; the optimal fermentation conditions were obtained as the fermenting temperature 37℃, the initial pH 7.0 and fermenting time 42h, the activity of neutral protease was enhanced to 377.98%. The good result of this experiment has been obtained. A solid foundation has been laid because of the improvement of the ability of neutral protease production and application in food fermentation of Bacillus subtilis 10075.
