A Review on Bioactive Substances from Bean Sources

摘要: 从血管紧张素转化酶Ⅰ抑制肽、自由基清除肽、防御素、凝集素和蛋白酶抑制剂这几个方面对豆源生物活性物质的研究概况进行综述,并对一些研究方向进行展望。

关键词: 豆类, 生物活性物质, 抗营养化合物

Abstract: This paper reviews the recent research progress in bioactive substances such as angiotensin I-converting enzyme inhibitory peptides, radical-scavenging peptides, defensin, lectin and protease inhibitors from bean sources. Meanwhile, the future development prospects of these bioactive substances are discussed.
