茅台酒糟中生育酚类、甾醇类和三萜类物质的检测及溯源

Identification and Traceability Analysis of Tocopherols, Sterols and Triterpenoids in Moutai Distiller’s Grains

摘要: 采用超声辅助提取结合气相色谱-质谱联用技术,建立酒糟中生育酚类、甾醇类和三萜类生物活性物质的分析方法,考察溶剂种类及料液比对目标物提取效果的影响,并在最优条件下实现茅台酒糟中5 种生育酚类、9 种甾醇类和4 种三萜类物质的定性以及其中7 种生育酚类和甾醇类物质的定量分析。7 种物质在其线性范围内线性良好(R2>0.99),稳定性好(相对标准偏差均不高于6.40%),准确度高(加标回收率在88.9%~102.3%之间),通过对茅台酒糟中18 种生物活性物质进行溯源分析,明确酿酒原料是其主要来源。

Abstract: A method for the analysis of tocopherols, sterols and triterpenoids in Moutai distiller’s grains was established using ultrasound assisted extraction (UAE) combined with gas chromatography-mass spectrometry (GC-MS). The influence of solvent type and solid-to-liquid ratio on the extraction efficiency of the target analytes was investigated. Under the optimal conditions, five tocopherols, nine sterols and four triterpenoids were identified, and seven tocopherols and sterols were quantitatively analyzed with good linearity (R2 > 0.99), good stability (relative standard deviation not more than 6.40%) and high accuracy (spiked recovery between 88.9% and 102.3%). Through the traceability analysis of 18 bioactive substances in Moutai distiller’s grains, the brewing raw materials were identified as their main source.
