摘要: 电化学技术利用待测物质发生反应产生的电化学信号实现其检测,因其操作简单、成本低、精密度及灵敏度高等优点在食品检测分析中的应用备受关注,并取得了许多研究进展。本文从电化学检测方法、类型、基本原理和在食品检测领域的研究现状方面进行了综述和分析,并对其应用发展前景进行展望,为促进电化学技术在食品检测分析领域的应用提供参考,以满足食品快速检测分析的发展需求。

Abstract: Electrochemical technology detects analytes based on their electrochemical signals. Due to its advantages of simple operation, low cost, high precision and sensitivity, the application of electrochemical technology in food detection and analysis has attracted much attention, and some research progress has been made. In this article, the types, basic principles and applications of electrochemical methods in the field of food detection are reviewed, and prospects for the application and development of electrochemical technology are discussed to provide a reference for promoting the application of electrochemical technology in the field of food detection and analysis in order to meet the development needs of rapid food detection and analysis.
