摘要: 金针菇多糖(Flammulina velutipes polysaccharide,FVP)是金针菇的主要活性成分之一,具有良好的免疫调节、抗炎、抗氧化、抗肿瘤活性。本文系统梳理FVP的提取纯化工艺及其精细结构特征,重点剖析其在“免疫器官-免疫细胞-模式识别受体-信号通路-肠道微生态”五大维度的分子免疫机制。同时,深入探讨FVP的构效关系,并对其在食品、医药、日化及农业领域的应用潜力进行展望,旨在为FVP的高值化开发提供科学参考。

Abstract: Flammulina velutipes polysaccharide (FVP), one of the major active components of F. velutipes, exhibit prominent immunomodulatory, anti-inflammatory, antioxidant, and antitumor activities. In this review, the extraction and purification processes of FVP as well as their fine structural characteristics are systematically summarized, and their molecular immunomodulatory mechanisms are analyzed with emphasis on five dimensions: immune organs, immune cells, pattern recognition receptors, signaling pathways, and intestinal microecology. Meanwhile, this review presents an in-depth discussion on the structure-activity relationship of FVP and an outlook on their application potentials in the fields of food, medicine, daily chemical products, and agriculture, aiming to provide scientific references for the valorization of FVP.
