摘要: 在有机农业蓬勃发展和消费者对健康食品需求日益增加的推动下,有机农产品因安全、环保、营养等优势深受消费者青睐,但在经济利益的驱动下,市场欺诈行为频发,严重扰乱行业秩序。真实性鉴别是保障有机农产品市场健康发展的关键环节,需持续研究可靠的分析鉴定技术。本文在查阅大量相关文献的基础上,系统梳理稳定同位素鉴别技术、光谱鉴别技术、色谱-质谱联用鉴别技术、分子生物学鉴别技术及多技术融合与智能化鉴别体系的原理、核心依据、研究进展与成效,并分析当前有机农产品真实性鉴别面临的挑战,展望未来发展趋势,旨在为有机农产品鉴别技术的创新优化与产业监管提供参考。

Abstract: Driven by the booming organic agriculture and increasing consumer demand for healthy food, organic agricultural products have gained significant consumer favor due to their perceived advantages in safety, environmental friendliness, and nutritional benefits. However, motivated by economic gains, fraudulent practices in the market have occurred frequently, severely disrupting market order. Authentication is a crucial link in safeguarding the healthy development of the organic agricultural product market, necessitating ongoing research into reliable analytical identification technologies. Based on an extensive review of relevant literature, this paper systematically summarizes the principles, core bases, research progress and achievements of various identification techniques, including stable isotope analysis, spectroscopic techniques, chromatography-mass spectrometry, molecular biological techniques, and intelligent identification systems based on multi-technology integration. It analyzes the current challenges and future trends in the authentication of organic agricultural products, aiming to provide references for the innovative optimization of identification technologies and the enhancement of industry supervision.
