摘要:  绍兴香糕系宁绍式糕点中的名点。根据绍兴香糕的生产工艺原理,研制了无糖香糕的配方和工艺。试制结果表明,通过适量添加糯米粉,可以解决无糖香糕由于不含蔗糖而造成物料之间粘结性差的问题。使用木糖醇作甜味剂,无糖香糕新产品是糖尿病人较理想的保健食品。

Abstract: The shaoxing sweetened rice cake is a famous one among the Ningbo-Shaoxing style cakes. The formula and technology of the cake without sugar were researched and produced according to the technological principle of the shaoxing sweetened rice cake. The results showed that the short of cohesiveness of the raw materials due to non-sucrose have been resolved by means of adding glutinous rice flour. The xylitol as a sweet substituted for sucrose in the cake. So, this new product, the sweetened rice cake without sugar, will be an ideal health food for diabetic.
