可食茁霉多糖膜的结构与性质研究

摘要: 研究茁霉多糖膜的力学性质、透气性和透湿性,并利用扫描电子显微镜和X─射线衍射仪测定茁霉多糖膜的表面结构和晶体结构。结果表明:茁霉多糖膜具有较大的透湿性和较小的透氧性。多糖膜的超微结构和晶体结构进一步证实,5%茁霉多糖和5%甘油形成的膜具有较高的阻气性和拉伸强度。

Abstract: The mechanical and barrier properties of Pulluan films were studied. X - ray and Scanning Electron Microscopy (SEM) were also used to observe the surface and the crystallinity structures of pulluan films. Pullu an film were shown to have low oxygen permeability and high moisture permeability. The microstructure and the crystallinity structure of Pulluan films revealed that the Pulluan films formed from the solution containing 5% Pulluan and 5% giycerin exhibited high oxygen barrier property and tensile strenth.
