鲍壳乳酸水解液理化特性的研究

摘要: 本文研究了鲍壳乳酸水解液中主要化学成分、波美度、pH、结晶状况以及温度等相互间的关系。研究结果表明:鲍壳乳酸水解液是一个由水分、乳酸根、蛋白质、糖、钙、镁、锌等多种成分构成的复杂体系;在一定条件下,其波美度与温度呈线性负相关,其钙浓度与水解液波美度呈线性正相关;水解液的结晶过程受其波美度以及温度的显著影响;而且,水解液的pH会随着钙盐的结晶析出而下降。

Abstract: The chemical and physical properties of the hydrolyzed from Abalone shell by Lactic acid were studied.The results showed that the liquid was a complicated system which consisted of many kinds of ingredients such as water,calcium ion,lactic acid radicale,protein,saccharide and so on.Under some conditions,the density of the liquid(indicated by Be degree) had linear negative relativity with the temperature,the concentration of the calcium ion and had linear positive relativity with the density.The process of crystallization was most depended on the temperature and density.The pH value would decrcase as crystallization of calcium ion formed in the liquid.
