绞股蓝甜味物质分离鉴定研究

Study on Gynostemma Sweet Substances Identification

摘要: 对"恩五叶蜜绞股蓝"其所含的甜味物质,采用超声波,ZTC1+1除杂剂、G-10凝胶层析等提取分离技术,得到高纯甜味物质,然后用液质质谱仪检测其分子量和分子所含元素种类和数量及估测分子式。通过研究初步得出该物质不是蔗糖、葡萄糖,而是分子量为251.1393,最大可能分子式为C13H19N2O3的物质。

Abstract: To" 5 leaf honey of EnShi"of Gynostemma which contains the sweetness of material, using ultrasound, ZTC1+1 botained agent, SephadexG-10 gel chromatography extraction and separation technologies, high pure sweet substances, then on quality mass spectrometer to detect molecular weight and molecular elements contained in the type and quantity estimation and molecular formula. Preliminary study of the substance is not sucrose, glucose, but the molecular weight of 251.1393, the greatest possible C13H19N2O3 formula of the material.
