果蔬总抗氧化能力间接测定法及其影响因素

摘要: 果蔬抗氧化能力是衡量果蔬抗氧化成分作用强弱的主要参数,评价总抗氧化能力的方法有直接法和间接法,其中,间接法是最为快捷、简便的分析方法。ABTS法和DPPH法是目前应用最为普遍的间接测定方法;间接测定的影响因素有底物及其相互之间的作用、体系中的干扰物质、pH值、反应时间、自由基产生体系等。研究人员试图用HPLC等方法与间接法联用以减少外界因素对检测结果的影响。

Abstract: The total activity is the main parameter to value the antioxidant ability of objects. Methods to measure total antioxidant activity can be divided into indirect and direct methods according to priciple, and indirect methods were fast and simple ways to determine the total antioxidant activity. At present, ABTS and DPPH were applied widely. The results of indirect methods were influenced by factors such as antioxidants and interactions, interference materials, pH, action time, producing system for free radicals and so on. Researchers tried to use the other advanced methods such as HPLC to decrease the environmental influence on the indirect method.
