摘要: 本文综述了对豆渣膳食纤维进行改性制备高活性膳食纤维的研究,重点介绍了酶处理、微生物发酵法、超高压均质处理以及多技术联用等方法,并阐述了提高豆渣膳食纤维可溶性的机理。

Abstract: The article was involved in several efficient processing methods of high quality dietary fiber with high concentration of soluble dietary fiber from soybean dregs,including enzyme treatment,microbial fermentation,ultra-high pressure heterogeneous processing and their cooperation in the last two decades. A big concern was paid on the mechanism of the processing methods.
