摘要: 植物源性农产品中的抗生素残留问题以及潜在健康风险日益受到广泛关注。本综述梳理分析了蔬菜、水果、谷物等常见植物源性农产品中抗生素的残留分布特征,发现不同类别农产品中抗生素残留存在显著差异,其中叶菜类蔬菜中残留现象较为突出,主要涉及四环素类、喹诺酮类和磺胺类等抗生素类型。通过深入分析植物源性农产品中抗生素的主要来源途径和潜在健康风险,发现其抗生素残留的来源复杂多样,虽然由膳食摄入引起的健康风险尚存争议,但由此产生的抗生素耐药性风险值得高度重视。此外,本综述还比对分析了不同国家和地区植物源性农产品抗生素残留检测标准和残留限量标准的异同,并对未来研究方向进行了展望,以期为植物源性农产品质量安全监管与风险评估研究提供科学依据。

Abstract: The issue of antibiotic residues in plant-derived agricultural products and their potential health risks have garnered increasing attention. This review systematically examines the distribution characteristics of antibiotic residues in common plant-derived products such as vegetables, fruits, and cereals, revealing significant variations among different categories of agricultural products. The problem of antibiotic residues in leafy vegetables is particularly prominent, primarily involving tetracyclines, quinolones, and sulfonamides. Through an in-depth analysis of the primary sources and potential health risks of antibiotics in plant-derived agricultural products, it has been found that the sources of antibiotic residues are complex and diverse. While the health risk of dietary intake of antibiotic residues remains controversial, the risk of antibiotic resistance warrants serious attention. Furthermore, this review compares and analyzes the differences in detection standards and maximum residue limits (MRLs) for antibiotics in plant-derived agricultural products across various countries and regions. Finally, it provides an outlook on future research directions, aiming to offer a scientific basis for the quality and safety regulation and the risk assessment of plant-derived agricultural products.
