不同饱和度植物油凝胶理化特性

Physicochemical Properties of Vegetable Oil Oleogels with Different Saturation Degrees

摘要: 以棉籽油、杏仁油、核桃油和石榴籽油4 种不同饱和度植物油为油相,蜂蜡和卵磷脂为凝胶剂制备油凝胶,对其进行理化性质测定和表征分析,研究不同饱和度植物油对油凝胶理化特性的影响。理化分析结果表明:4 种油凝胶的酸价(0.19~0.77 mg/g)和过氧化值(0.03~0.06 g/100 g)均符合国家标准,饱和度从高到低依次为棉籽油、杏仁油、核桃油和石榴籽油,石榴籽油中含3 个双键的不饱和脂肪酸石榴酸相对含量高达82.59%。4 种油凝胶的持油率均大于99%,持油率与油脂饱和度无相关性。表征结果显示:4 种油凝胶分子间存在范德华力,均表现为β’晶型,结晶度与油脂中含3 个双键的不饱和脂肪酸含量有关;油凝胶的晶体结构受不饱和脂肪酸类型影响,结构以弹性形变为主,具有类固体性质,石榴籽油油凝胶具有最高的弹性模量、黏性模量和表观黏度,触变回复率低至49.15%,含3 个双键的不饱和脂肪酸含量主要影响油凝胶的流变性能;石榴籽油油凝胶的熔融温度(48.9 ℃)和结晶温度(38.6 ℃)高于其他3 种油凝胶,油凝胶的结晶和熔融温度与油脂不饱和度呈正相关。本研究可为植物油的开发利用提供理论参考,为油凝胶的制备及其在食品加工领域的应用提供理论依据。

Abstract: Oleogels were prepared using four vegetable oils with different degrees of saturation (cottonseed oil, almond oil, walnut oil, and pomegranate seed oil) as the oil phase and beeswax and phosphatidylcholine as the gelator, and their physicochemical properties were determined. The aim was to study the effects of different saturation levels of vegetable oils on the physicochemical properties of oleogels. The physicochemical analysis showed that both the acid value (0.19–0.77 mg/g) and peroxide value (0.03–0.06 g/100 g) of the four oleogels met the national standards. Their saturation levels decreased in the order: cottonseed oil > almond oil > walnut oil > pomegranate seed oil. The relative content of pomegranate acid, a polyunsaturated fatty acid with three double bonds, in pomegranate seed oil was as high as 82.59%. The oil retention rates of all four oleogels were greater than 99%, and there was no correlation between the oil retention rate and the saturation degree. Intermolecular van der Waals forces were present in the four oleogels, all of which showed β’ crystal form, and the crystallinity was correlated with the content of polyunsaturated fatty acids with three double bonds in oils. The crystal structure of the oleogels was affected by the type of unsaturated fatty acids, mainly featuring elastic deformation, and these oleogels had solid-like characteristics. Pomegranate seed oil oleogel had the highest elastic modulus, viscous modulus and apparent viscosity, and the thixotropic recovery rate was as low as 49.15%. The content of polyunsaturated fatty acids with three double bonds mainly affected the rheological properties of oleogels. The melting temperature (48.9 ℃) and crystallization temperature (38.6 ℃) of pomegranate seed oil oleogel were higher than those of the other three oleogels. The crystallization and melting temperatures of oleogels was positively correlated with the unsaturation degree of oils. This study provides theoretical references for the development and utilization of vegetable oils and offers a theoretical basis for the preparation of oleogels and their application in the field of food processing.
