摘要: 食用菌多糖是从食用菌子实体、菌丝体或发酵液中提取的主要生物活性成分之一,具有免疫调节、抗氧化、调控肠道菌群等多种生物学功能,在功能性食品、医药和保健品等领域具有应用潜力。分子质量是影响食用菌多糖功能特性的重要结构参数之一,其对多糖生物学活性的影响已成为实现多糖精准营养与高值化利用的研究热点。然而,现有关于食用菌多糖分子质量对其物理及功能特性调控的研究较为分散,缺乏系统性总结。基于此,本文系统总结食用菌多糖的分级与降解方法,在简述分子质量对其物理特性影响的基础上,重点探讨分子质量差异对其生物学功能特性的影响,旨在为食用菌多糖的深入开发与应用提供理论参考。

Abstract: Edible mushroom polysaccharides, major bioactive components derived from the fruiting bodies, mycelia, or fermentation broth of edible fungi, exhibit diverse biological activities, including immunomodulatory, antioxidant, and gut microbiota-modulating effects, highlighting their potential applications in functional foods, pharmaceuticals, and nutraceuticals. Molecular mass is a critical structural parameter affecting the functional properties of edible mushroom polysaccharides, and its role in regulating polysaccharide bioactivity has attracted increasing research interest in the context of precision nutrition and high-value utilization of polysaccharides. However, current studies addressing the effect of molecular mass on the physicochemical and biological properties of edible mushroom polysaccharides remain scattered and lack systematic synthesis. In this review, the methods for the fractionation and degradation of edible mushroom polysaccharides are systematically summarized. Furthermore, the effect of the molecular mass of edible mushroom polysaccharides on their physicochemical properties is briefly discussed, with particular emphasis placed on elucidating the impact of molecular mass differences on their biological functions. This review aims to provide a theoretical basis for the rational development and application of edible mushroom polysaccharides.
