锌与农药配合喷施对小麦籽粒及其制品锌生物有效性的影响

Effect of Zinc and Pesticide Co-Application on Zinc Bioavailability in Wheat Grains and Their Products

摘要: 目的:探讨锌肥与农药配合喷施对小麦籽粒及其制品锌生物有效性的影响。方法:进行连续两年的田间试验,设置5 个开花期喷施处理(空白(CK)、Zn、Zn+甲基硫菌灵/高效氯氰菊酯(Zn+P1P2)、Zn+甲基硫菌灵/哒螨灵(Zn+P1P3)和Zn+高效氯氰菊酯/哒螨灵(Zn+P2P3)),以及5 个灌浆期喷施处理(CK、Zn、Zn+吡虫啉/三唑酮(Zn+P4P5)、Zn+吡虫啉/多菌灵(Zn+P4P6)和Zn+三唑酮/多菌灵(Zn+P5P6))。测定小麦籽粒及其制品(面粉、麸皮、馒头)锌、铁、锰和植酸(phytic acid,PA)含量,以及馒头的品质指标,并通过PA/Zn物质的量比和人体每日吸收总锌(total daily absorbed zinc,TAZ)模型评估锌的生物有效性。结果:与CK相比,锌与开花期两种农药(Zn+P1P2、Zn+P1P3和Zn+P2P3)或灌浆期两种农药(Zn+P4P5、Zn+P4P6和Zn+P5P6)配合喷施显著提高了籽粒、面粉、麸皮和馒头锌含量,增幅分别为64.41%~94.21%、54.99%~89.99%、67.08%~86.67%和56.31%~84.03%,但对产量和PA含量无显著影响。同时,锌肥与农药配合喷施显著降低了PA/Zn物质的量比,提高了TAZ值,表明锌的生物有效性显著提升。与单独喷Zn处理相比,锌与农药配合喷施未显著影响面粉、麸皮和馒头的锌含量及锌生物有效性。此外,开花期和灌浆期喷施处理之间的锌含量和生物有效性无显著差异。在加工过程中,富锌小麦磨制成面粉时PA的损失率(89.46%~91.41%)高于锌的损失率(83.93%~88.13%),因此面粉锌生物有效性较籽粒平均高1.43 倍。馒头制作过程中,PA含量进一步降低(68.04%~72.82%),但锌含量增加(11.35%~13.69%),故馒头锌生物有效性显著提高,较面粉和籽粒分别高3.30、4.94 倍。此外,锌肥与农药配合喷施未对铁和锰含量和生物有效性以及馒头品质产生负面影响。结论:将锌肥与农民常用的开花期或灌浆期农药配合喷施,能有效提高小麦籽粒及其制品(特别是馒头)锌含量和生物有效性,是改善人体锌营养健康的切实可行措施。

Abstract: Objective: To investigate the effect of combined foliar application of zinc fertilizer and pesticides on the zinc bioavailability in wheat grains and their products. Methods: A two-year field experiment was conducted, with five treatments applied at the anthesis stage [control, Zn, Zn + thiophanate-methyl/cypermethrin (Zn + P1P2), Zn + thiophanate-methyl/propargite (Zn + P1P3), and Zn + cypermethrin/propargite (Zn + P2P3)], and five treatments applied at the milking stage [control, Zn, Zn + imidacloprid/triadimefon (Zn + P4P5), Zn + imidacloprid/carbendazim (Zn + P4P6), and Zn + triadimefon/carbendazim (Zn + P5P6)]. The concentrations of zinc, iron, manganese, and phytic acid (PA) in wheat grains and their products (flour, bran, steamed bread), as well as the quality attributes of steamed bread, were determined. Zinc bioavailability was evaluated using PA/Zn molar ratio and the total daily absorbed zinc (TAZ) model. Results: Compared with the control group, the combined foliar application of Zn with two pesticides at the anthesis stage (Zn + P1P2, Zn + P1P3, Zn + P2P3) or at the milking stage (Zn + P4P5, Zn + P4P6, Zn + P5P6) significantly increased the Zn concentration in wheat grains, flour, bran and steamed bread by 64.41%-94.21%, 54.99%–89.99%, 67.08%–86.67% and 56.31%-84.03%, respectively, but had no significant effect on grain yield or phytic acid content. Meanwhile, the combined application significantly reduced the PA/Zn molar ratio and increased the TAZ value, indicating a marked improvement in Zn bioavailability. Compared with the Zn-alone treatment, the combined application of Zn and pesticides did not significantly affect the Zn concentration or Zn bioavailability in flour, bran or steamed bread, nor were there any significant differences in Zn concentration or bioavailability between the anthesis and milking stage treatments. During the milling of zinc-enriched wheat, the loss rate of PA (89.46%–91.41%) was higher than that of Zn (83.93%–88.13%), resulting in a 1.43-fold higher Zn bioavailability in flour than in grains. During steamed bread making, PA concentration further decreased (68.04%–72.82%) while Zn concentration increased (11.35%–13.69%), leading to a significantly improved Zn bioavailability in steamed bread, which was 3.30 and 4.94-fold higher than that in flour and grains, respectively. In addition, the combined application of Zn and pesticides did not negatively affect the content or bioavailability of Fe and Mn, nor did it affect the quality of steamed bread. Conclusion: The combined foliar application of zinc fertilizer with pesticides commonly used by farmers at the anthesis or grain-filling stage can effectively increase the Zn content and bioavailability in wheat grains and their products (especially steamed bread), providing a practical and feasible approach to improving human zinc nutrition and health.
