内蒙古传统奶油类乳制品脂肪酸指纹特征

Fatty Acid Fingerprint Properties of Traditional Creamy Dairy Products from Inner Mongolia

摘要: 利用脂肪酸(fatty acids,FAs)指纹鉴别传统奶油类乳制品真实性具有可行性。采集内蒙古地域传统手工和现代化工厂制作黄油、奶皮子和稀奶油,西式黄油和生牛乳等乳脂,以及植物黄油、人造稀奶油、奶油粉、植脂末、菜籽油和牛(肉)脂肪等非乳脂比较研究样品,14 类样品共252 份。采用气相色谱法检测FAs,并进行差异性比较,正交偏最小二乘判别分析和层次聚类分析,观察聚类特征和模式相似度。传统和现代奶油类产品和生牛乳乳脂聚类一个区域,模式相似度为71.26%;细化分析传统和现代奶油类产品有分离趋势;传统奶油类中奶皮子和稀奶油聚类较近,模式相似度为99.73%,而传统黄油与两者显著分离。非乳脂的牛(肉)脂肪、植物黄油、植脂末、奶油粉、人造稀奶油和菜籽油依次远离,且相似度为46.48%。分别分析不同种类黄油、奶皮子和稀奶油,发现存在部分交叉,但有明显的分离趋势,提示制作原料和工艺差异较大,FAs指纹整体不同。利用FAs指纹判别传统奶油类乳制品真实性具有可行性,为传统奶油类乳制品标准的建立和完善提供参考数据和创新方法。

Abstract: This study examined the feasibility of using fatty acids (FAs) fingerprints for authenticity verification of traditional cream-based dairy products. A total of 252 samples of 14 categories of traditional handmade and factory-produced dairy products (traditional butter, Mongolian urum, cream, western butter, and raw milk) as well as non-dairy fat products (margarine, artificial cream, cream powder, non-dairy creamer, rapeseed oil, and beef fat) were collected for determination of FAs by gas chromatography (GC). Differential analysis of FAs was carried out. Orthogonal partial least squares-discriminant analysis (OPLS-DA), and hierarchical cluster analysis (HCA) were used to observe clustering characteristics and pattern similarity. Traditional and modern cream products, along with raw milk, were clustered in one region with a pattern similarity of 71.26%. Further analysis showed a trend of separation​ between traditional and modern cream products. Among traditional cream samples, Mongolian urum and cream were clustered closely, with a pattern similarity of 99.73%, while they were clearly separated from traditional butter. Beef fat, margarine, non-dairy creamer, cream powder, artificial cream and rapeseed oil were separated from dairy fat products, with a pattern similarity of 46.48%. Separate analysis of different types of butter, Mongolian urum, and cream revealed some overlap but distinct separation trends, indicating significant differences in raw materials and production processes, leading to overall differences in FA fingerprints. This study confirms the feasibility of using FA fingerprinting to authenticate traditional dairy cream products, providing reference data and an innovative method for establishing and improving standards for these products.
