摘要: 生鲜预分切果蔬是一种新型的果蔬加工方法,具有安全、新鲜、营养、方便等特点,市场潜力巨大。本文详细介绍了生鲜预分切果蔬的保鲜方法及其研究、应用情况,为其研究和生产提供参考。

Abstract: The fresh-cutting is a new kind of processing technology of fruits and vegetables,with the characteristics of safety,freshness,nutrition and convenience,and it has huge market potentiality. This paper gave a review of fresh-keeping method of the fresh-cut fruits and vegetables,and its situation of research and application in order to provide references for research and production.
