两种低值金枪鱼赤身肉的营养成分分析与评价

摘要: 本文以青干金枪鱼和鲔的赤身肉为研究对象,进行了全面的营养成分与评价。结果表明:青干金枪鱼赤身肉的水分、灰分、粗蛋白和粗脂肪的含量分别为71.13%、1.56%、24.56%和0.63%,鲔分别为72.27%、1.38%、23.44%和1.47%,且矿物质元素种类齐全,含量丰富,而重金属均为超出国家限量标准;青干和鲔的必需氨基酸指数(EAAI)分别为96.23、96.66,表明两种鱼的氨基酸营养价值高,均属优质蛋白源;青干金枪鱼和鲔多不饱和脂肪酸含量丰富,DHA+EPA的总含量分别高达52.07%和58.09%。

Abstract: In this paper, the nutritional composition in the muscle of Thunnus tonggol and Euthynnus affinis are comprehensively analyzed. The moisture、ash contents、crude protein contents、the total content of amino and crude fat contents of Thunnus tonggol are respectly 71.13%、 1.56%、24.56%、24.56% and 0.63%.For Euthynnus affinis,they are respectly 72.27%、1.38%、23.44% and 1.47%. The muscle of Thunnus tonggol and Euthynnus affinis containe abundant macro elements and micro elements, and the certain hazardous substances of Thunnus tonggol and Euthynnus affinis are lower than standard. The essential amino acids index (EAAI) of Thunnus tonggol and Euthynnus affinis are respectly 96.23 and 96.66. This indicates that the nutritional value of amino acids of this two kinds of fish are both very high,they are good resource of high quality protein. Both of they are rich in poly-unsaturated fatty acids, the content of poly-unsaturated fatty acids such as DHA.EPA of Thunnus tonggo and Euthynnus affinis are 52.07% and 58.09%.
