摘要: 益生菌被定义为是一类安全、无致病性且对宿主健康有益的活性微生物,双歧杆菌就是其中最值得研究的一种肠道益生菌。近年来关于双歧杆菌代谢物及健康机制方面的研究受到重视,它能够通过发酵利用营养物质产生不同种类的有益代谢产物,主要可分为短链脂肪酸、酚类物质、氨基酸及维生素及等代谢物。这些有益代谢产物的生成涉及一系列复杂的酶和底物的代谢途径,且对宿主健康具有积极的影响,在益生菌制剂、食品添加剂等方面具有应用前景。双歧杆菌的发酵产物正在逐渐应用于产品开发,例如益生菌饮料、乳酸菌酸奶和功能性保健品。因此,本文简述双歧杆菌有益代谢物生成途径及其健康作用和应用,旨在为双歧杆菌代谢物在食品、医药、保健品等领域的开发和应用提供重要的科学支持。

Abstract: Probiotics are defined as a group of active microorganisms that are safe, non-pathogenic and beneficial to host health, and Bifidobacterium is one of the most studied intestinal probiotics. In recent years, research on the metabolites and health mechanisms of Bifidobacteria has been emphasized, as they are able to utilize nutrients through fermentation to produce different types of beneficial metabolites, which can be classified as short-chain fatty acids, phenolics, amino acids, and vitamins and so on. A number of intricate enzyme and substrate metabolic processes are involved in the production of these advantageous metabolites, which have a favorable effect on host health and show promise for use in probiotic treatments, food additives, and other uses. Bifidobacterium fermentation products are progressively being utilized in the creation of probiotic drinks, lactobacilli yogurt, and functional health goods. Therefore, this paper briefly describes the beneficial metabolite production pathways of Bifidobacteria and their health roles and applications, aiming to provide important scientific support for the development and application of Bifidobacteria metabolites in the fields of food, pharmaceuticals and nutraceuticals.
