葛根素的提取方法、生物活性及生产应用研究进展

摘要: 葛根素作为我国传统的药食两用植物葛根的主要活性成分,具有保护心血管系统、抗糖尿病、抗肿瘤、神经保护、骨保护、植物雌激素样作用、调节肠道菌群等多种生物活性,被广泛地应用于保健及生物医药、食品加工生产中,发挥着广泛而良好的效果。本文通过广泛查阅知网、Web of Science、PubMed等数据库中近5 年关于葛根素生产应用的中外文献并进行筛选汇总分析,总结葛根素的提取方法、生物活性以及在食品加工中的应用,并进行展望,以便为葛根素新产品的开发和应用提供参考。

Abstract: Puerarin is the major bioactive ingredient of Pueraria lobata, a traditional medicinal and edible plant in China, and it exerts multiple biological activities, including cardiovascular protection, anti-diabetes, anti-tumor, neuroprotection, bone protection, phytoestrogen-like function and regulating intestinal flora. It is widely used in healthcare, biomedicine, and food processing, exerting extensive and favorable effects. Based on an extensive literature search in the CNKI, Web of Science and PubMed databases in the past five years, this paper summarizes the extraction methods, biological activities and application in food processing of puerarin and discusses future prospects to provide references for the development and application of new puerarin-based products.
