水果质地品质无损检测技术研究进展

Research progress on non-destructive testing technology for fruit texture quality

摘要: 水果质地是决定其口感、贮藏性能和商品价值的关键指标之一。传统的水果质地检测方法虽精度高,但存在耗时长、成本高、具有破坏性等缺点。近年来,基于水果声学、光学、力学及电学特性的检测技术因其无损、快速和准确的优势而发展迅速,逐步应用于水果质地评估。然而,现有研究对各类无损检测技术在水果质地评价中的适用性、优缺点及未来改进方向仍缺乏系统总结。本文综述了上述无损检测技术在评估水果质地方面的研究进展,分析了各类检测技术在实际应用中所面临的问题与挑战,并对水果质地无损检测技术的研究方向进行展望,以期为水果质地无损检测技术的研究提供参考。

Abstract: Fruit texture is one of the critical indicators determining palatability, storage characteristics, and commercial value. Although conventional texture evaluation methods offer high accuracy, their applications are heavily constrained by destructive sampling, labor-intensive operations, and high operational costs. Recently, non-destructive testing (NDT) technologies leveraging the acoustic, optical, mechanical, and dielectric properties of fruits have advanced rapidly due to their non-destructive nature and high efficiency. Consequently, they have been increasingly implemented in fruit texture evaluation. However, a comprehensive synthesis addressing the specific applicability, distinct advantages, underlying limitations, and optimization pathways of these heterogeneous NDT techniques remains deficient. Therefore, this paper systematically reviews recent breakthroughs in fruit texture assessment using the aforementioned NDT methods. Furthermore, the underlying engineering challenges and bottlenecks encountered in practical applications are thoroughly elucidated. Finally, future research trajectories for fruit texture NDT technologies are prospected, aiming to provide reference for subsequent scholarly investigations.
