Study on Extraction and Physicochemical Properties of Pigment from Trichosanthes kirilowii Maxim. Peel

Abstract:

It was found experimentally that when the ratios of ethanol to ether and Trichosanthes kirilowii Maxim. peel to ethanol-ether are 1:1 (V/V) and 1:15 (g/ml) respectively, the extraction efficiency of Trichosanthes Kirilcwii Maxim. peel pigment reaches the highest. The spectrum analysis indicated that Trichosanthes kirilowii Maxim peel. pigment is stable at pH 2 to 5 and below 60 ℃, and high concentrations of sucrose and glucose can protect its color. However, Fe3+ has more negative effects on the pigment than Zn2+ and Ca2+, and its degradation may be accelerated under sunlight.
