Abstract: Transesterification was conducted in soybean oil with phytosterol under the catalysis of Novozym 435 lipase. The optimum reaction conditions were obtained by single factor experiments and response surface analysis to be reaction between soybean oil and added phytosterol at a concentration of 5.2% for 3 h at 101 ℃ in the presence of 1% lipase. The rate of transesterification was 85.67% under these conditions.

Key words: phytosterol, soybean oil, transesterification, lipase
