Abstract: One-factor-at-a-time method and response surface methodology were used to optimize the enzymatic extraction of water soluble dietary fiber from apple pomace with cellulase. The highest extraction rate of water soluble dietary fiber, 17.50%, was obtained under the conditions: enzyme dose 0.67%, buffer pH 5.55, hydrolysis time 1.90 h, and temperature 45 ℃.

Key words: apple pomace, cellulase, soluble dietary fiber (SDF), response surface analysis
