Abstract: Hioki LCR tester was used to measure the electric properties of Qinguang Ⅱ peaches. Meanwhile, the quality parameters of Qinguang Ⅱ peaches were measured under the storage temperature of 25 ℃. The results showed that the impedance (Z), equivalent parallel inductance (Lp), firmness, TSS, TA and water content of the peaches revealed an obvious decrease at room temperature with increasing storage time. However, the equivalent parallel capacitance (Cp) exhibited a gradual increase. A significant correlation of electric parameters (Z, Cp, or Lp) and fruit quality parameters was observed (P < 0.05). Moreover, effective prediction models were established for fruit quality parameters with a significant correlation coefficient. In conclusion, electric parameters can indicate peach quality.
