Analysis and Application of Microbial Volatile Organic Compounds in Agricultural Products

Abstract: This review outlines the analytic methods for the determination of microbial volatile organic compounds (MVOCs) and their applications in agricultural products. The methods used for MVOCs capture, instrumental detection and data analysis are summarized. The focus of this review is on the applications of MVOCs in the detection of microbial contaminants in agricultural products, the quality control of fermented foods and the exploration and utilization of microbial resources.
