Research and Application on Enzymatic Synthesis of Specific Structured Triacylglycerols

Abstract: In this paper, the encouraging products - specific structured triacylglycerols synthesized by regiospecificity of lipaseare reviewed. The sources of substrate oils, acyl donors and lipase, reaction types and condition, production processes for someimportant SSTs are introduced in detail.
