Application and Safety of Enzyme Preparations Derived from Microorganism in Food Industry

Abstract: Enzyme preparations coming from microorganism were listed and their applications in food industry were summedup. Safety standards and evaluations were concerned and advices of producing safe enzyme preparations were put forward.Prospect and safety of the enzyme preparation in application were discussed.
