Effect of Extraction Condition on the Recovery Rate and Ca~(2+)-ATPase Activity of Actomyosin in Silver Carp

Abstract: Effect of extraction condition on the recovery rate and Ca 2+ -ATPase activity of actomyosin was investigated. The result suggested that the recovery rate and Ca 2+ -ATPase activity were high respectively after water-washing one time and buffer- washing three times. Both of them decreased with increasing extraction temperature. The activity hardly changed below 20℃, but it obviously went down while extraction temperature was over 20℃. Extraction time had significant influence on the activity, and also centrifugal velocity on the recovery rate. And the optimal time was 20 hours and centrifugal velocity 8000r/ min, respectively. Under the extraction condition that had been optimal, the recovery rate of actomyosin was 12.57% and Ca 2+ - ATPase activity reached 60.62U/g.
