Abstract: Temprate, light microclimate, soil, and water are the main ecological factors, affecting yield components, fruit composition (anthocyanin concentration, sugars, pH, titratable acidity, and total skin and seed polyphenols); and wine quality parameters the alcoholic content, the concentration of malic acid, titratable acidity, anthocyanins, total phenols, color intensity, stabilizing color, and the mouthfeel properties. Many of ecological factors are correlated with each other. It is likely that the effects of climate and soil on fruit quality are mediated through their influence on vine water status. The ecological factors were characterized in the famouse winegrape viticultural districts in France. The viewpoints of ecological development in winegrape viticultural districts in china are also suggested in this article.
