Study on the Scavenging of ROS and Anti-lipid Peroxidation by Chlorogenic Acid

Abstract: The scavenging ability on ROS(Reactive Oxygen Species)—O2·, ·OH and H2O2 and anti-lipid peroxidation of chlorogenic acid was evaluated by means of chemiluminescence system. The results show that the scavenging ability varies with the concentration of chlorogenic acid and the type of reactive oxygen species. High concentration of chlorogenic acid has significant scavenging effects, while very low concentration has less effect, even has prooxidative actions towards O·2and· OH. The anti-lipid peroxidation of chlorogenic acid is also obvious and is related with the concentration of chlorogenic acid.
