Abstract: With honey solved in water directly, on optimum conditions, the contents of zinc in fresh honey and mellow honey were determined by flame atomic absorption spectrometry. Compared with digesting sample with moisture, this method is easier, faster and accurater. It has a good recovery of 101.5% and 102.2% respectively, RSD of 2.43% and 3.26% respectively. The detection limit is 0.8 μg/ml.

Key words: flame atomic absorption spectrometry, honey, zinc
