Development of Compound Health Drink of Gynostemma pentaphyllum Makino and Polyrhachis vicina Roger

Abstract: Gynostemma pentaphyllum Makino and Polyrhachis vicina Roger were used to prepare a kind of compound health beverage by means of orthogonal rest design.Results showed that the optimal conditions for water extraction of Gynostemma pentaphyllum Makino are as follows:solid to liquid ratio 1:14,extraction time 2 h and extraction temperature 80 ℃,and the optimal conditions for papain hydrolysis of Polyrhachis vicina Roger are as follows:papain addition 0.3%,pH 6 to 7,solid to liquid ratio 1:8,enzymolysis time 2.5 h and enzymolysis temperature 45 ℃.The optimal compound beverage formula is ratio of water extact of Gynostemma pentaphyllum Makino to hydrolysate of Polyrhachis vicina Roger 2:1,their mixture 10%,honey 2.8%,citric acid 0.05%,sugar 7% and salt 0.05%.This beverage not only has good color,flavor and delicious taste but also has abundant nutrition and health function.
