Abstract: Taking hydrolysis degree and peptide yield as an indexes, the effect of temperature,pH,substrate concentration, alkaline amount on enzymolysis of male silkworm moth protein were studied. The optimal conditions are determined by orthogonal rotation combination design as follows:64.5 ℃,pH 9.36,substrate concentration 4.46%,protease amount 6660 U/ml;and reaction time 300 min. Under these conditions, the hydrolysis degree is up to 21.65% and the peptide yield is up to 34.81%.
