Simultaneous Determination of Five Kinds of Sugar in Foods with HPLC-ELSD

Abstract: A method for the simultaneous determination of fructose,glucrose,sucrose,maltose and lactose in foods was developed with HPLC-ELSD. Analytes were separated by using a Inertsil NH2 column(4.6×250 mm,i.d 5μm) with acetonitrile-water as mobile phase for gradient elution,and external standard calibration curves were used for quantitation. Results showed that there are good linear correlations between the concentration logarithm and peak area logarithm of the five kinds of sugar with the correlation coefficients above 0.999. The average recoveries are 90.62% to 106.89% with the relative standard deviations of 0.76% to 3.56%. The detection limits are 0.009 to 0.016 mg/ml.
