Study on Backward Extraction of Soybean Protein by CAB/n-Heptane/Hexanol Reverse Micelles

Abstract:  Backward extraction of soybean protein by CAB/n-heptane/hexanol reverse micellar system from full-fat soybean powder was studied. The effects of three factors were investigated by the response surface method (RSM). The best technics of backward extraction was obtained.
