Optimization Study on Processing Conditions of Corn Resistant Starch

Abstract: By orthogonal test the best technologies for producing resistant starch with autoclave method and acid hydrolysis method were determined using ordinary corn starch as raw material respectively. The effects of various processing parameters on resistant starch productivity were studied. The best autoclave method technology parameters are: 20% starch being heated for 75 min at 120 ℃, and the productivity is 23.5%; The best acid hydrolysis method technology parameters are: 30% starch being heated by boiling water bath for 1.5 h after 2% HCl hydrolysis for 1 h, and the productivity is 27.24%. The acid hydrolysis method is better in terms of cost and productivity.
