Abstract: To optimize extraction process of water-soluble polysaccharides from seeds of Pistacia chinensis Bung on the base of single factor investigation, effects of extraction temperature, extraction time and ratio of water to material as well as their interactions on yield of the polysaccharides were studied by central composite design. The predictive polynomial quadratic equations model was developed by response surface analysis. The optimal extraction conditions of the polysaccharides from seeds of Pistacia chinensis Bung are concluded as follows:extraction time 3 hours, temperature 90 ℃ and ratio of water to material 34:1. Under these conditions, the yield of the polysaccharides is up to 4.27%.
