Study on Extraction and Stability of Red Pigment from Zingiber strioatum

Abstract: Based on single factor tests,the optimum extraction conditions of red pigment from Zingiber strioatum were determined by orthogonal test. The results of orthogonal test showed that the optimum extracting conditions are as follows:extraction temperature 60 ℃,time 30 minutes and proportion of material to 70% ethanol at pH 1 1:150. The effects of different conditions such as light,carbohydrates,preservatives,oxidant and metallic ions on the stability of the pigment were also discussed. This red pigment is less stable to sodium benzoate,potassium sorbate,H2O2 and Fe3+,but has good stability under the other conditions.
