Research Progress on Production Technology of Erythorbic Acid

Abstract: Erythorbic acid is a stereoisomer of vitamin C acting as a food antioxidant. The paper summarizes the research progress on the production technologies of erythorbic acid and its sodium salt,the main problems and corresponding solutions of the domestic erythorbic acid and its sodium salt production.
